Ingredients
- 1/2 cup peanut butter creamy
- 1/2 cup coconut aminos
- 1 garlic clove chopped
- 1 tsp onion powder
- coconut oil or avocado oil (for cooking)
- 2 chicken breasts cubed
- 1/2 cup carrots shredded
- 2 tbsp cilantro chopped
- 4 gluten-free tortilla wraps

Instructions
- Start by adding the peanut butter, coconut aminos, garlic, and onion to a large mixing bowl and whisk well. Set aside.
- Next, heat a large skillet over medium heat with the coconut or avocado oil and add the cubed chicken breasts. Cook for about 5 minutes on each side or until the chicken is no longer pink and completely cooked through.
- Add the peanut sauce and shredded carrots and cook for an additional 3-5 minutes or until the sauce has thickened.
- Stir in the cilantro and serve with a tortilla. Enjoy!

I usually use butter lettuce to replace the flour tortilla!
What are coconut aminos, new to me?
Coconut aminos is very similar to soy sauce in taste, look, and texture, but instead of being made from soy, is made from sap of the coconut plant!
Wow! Made these today with no sugar added JIFF and chickpea tortillas. These were a light and quick lunch and very delicious and tasty. I used diced scallions to top them because I forgot to buy cilantro. Thanks for a great recipe!

What can I use instead of coconut aminos? can’t get them here.
You can certainly use soy sauce, Cleo! Soy sauce is just a bit saltier than coconut aminos, but is still a great option for this recipe. ?
