- 1 tbsp avocado oil
- 1 rotisserie chicken shredded
- 1 cup pico de gallo
- 2 tbsp water
- 1 packet taco seasoning (like simply organic brand)
- taco shells for serving

Instructions
- Add the avocado or coconut oil to a large skillet over medium heat with the shredded rotisserie chicken. Add the Pico de Gallo, water, and taco seasoning. Mix well to coat the chicken.
- Serve with taco shells and top with desired toppings (shredded lettuce, guacamole, cilantro, shredded cheese)
- Tip: You can swap out the taco shells for lettuce leaves!

I also like to use the crock pot to cook chicken breasts in jarred salsa. Shred the chicken after cooked. Next time I will add taco seasoning!
Making these tonight. I bought a rotisserie chicken for Monday’s dinner with the intention of using the leftovers for Taco Tuesday, however, my gut wasn’t cooperating yesterday so I fasted instead. Penzey’s Spices makes a great Chicken Taco seasoning that is all natural, no msg or other preservatives. I buy this by the bagful and it is so much tastier without the side effects of packaged mix. It’s great with ground beef also. I hope this helps someone else who is trying to eliminate preservatives from their diet.
