Ingredients
- 2 cups cooked short grain brown or white rice
- 2 14 oz packs roasted seaweed snacks
- 2 cups edamame beans in pod
- 4 hardboiled eggs , halved
- 1 English cucumber , sliced
- 1 pint cherry tomatoes , halved
- 4 tsp sesame oil
- sesame seeds

Instructions
- Divide the rice between four lunch boxes or bowls, tucking the seaweed on the side.
- Arrange the edamame beans, eggs, cucumber and cherry tomatoes.
- Drizzle the sesame oil over the edamame beans, and sprinkle the plate with sesame seeds.
