Ingredients
- 1 large spinach, whole-wheat, or gluten-free tortilla
- 1 tbsp olive oil
- 1/2 red onion - halved and sliced
- 1 whole roasted red pepper (jarred) - sliced
- 3 whole canned artichoke hearts - halved
- 1/4 cup hummus (homemade or store-bought)
- 2 cups mixed greens
- 1 tbsp balsamic vinaigrette (homemade or store-bought)
- 1 oz goat cheese - crumbled

Instructions
- Heat the olive oil in a medium skillet over medium-low heat. Add the red onions and cook for 10-15 minutes until soft and golden brown, stirring occasionally. In a large bowl, toss the mixed greens with the balsamic dressing.
- Warm the tortilla in the microwave or in a skillet and assemble the wrap. Spread the hummus down the center of the wrap and sprinkle the goat cheese on top. Then add the red pepper, artichoke hearts, and onions. Top with the mixed greens, roll it up, and enjoy!
