- 2 medium zucchini - sliced lengthwise (about 1/4 inch thickness)
- 2 tsp olive oil
- sea salt + pepper
- 1 1/2 oz goat cheese
- 1 oz kalamata or fresh green olives - chopped
- 1 cup baby spinach

Instructions
- Preheat a grill or grill pan to medium heat. Discard the outermost layers of the zucchini and brush the rest of the slices with olive oil and sprinkle with salt and pepper. Place on the grill or grill pan and cook until tender, about 4 minutes per side. Remove from grill and let cool slightly.
- In a small bowl, combine goat cheese and olives. Spread about 1/2 tsp of the goat cheese mixture onto one side of the zucchini slice. Top with a few spinach leaves and roll up. Enjoy!
