Ingredients
- 3/4 cup coconut flour , sifted
- 1 scoop collagen protein (optional)
- 1 tsp gluten-free baking powder
- 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1 egg
- 1/2 cup coconut oil , melted
- 1/2 cup pure maple syrup
- 1/2 cup unsweetened almond or cashew milk
- 2 tbsp blackstrap molasses
- 1 tsp pure vanilla extract

Instructions
- Start by preheating the oven to 350 degrees F and lining a muffin tin with muffin liners.
- Next, add all the dry ingredients to a mixing bowl and whisk well. In a separate bowl, add the egg, melted coconut oil, pure maple syrup, almond or cashew milk, molasses, and vanilla. Mix well.
- Pour the wet mixture into the dry and whisk until combined.
- Pour the batter into the muffin tins filling them ¾ of the way. Bake for 18-20 minutes.
- Serve with a side of fresh berries & ½ cup of full-fat, unsweetened Greek yogurt or unsweetened coconut milk yogurt if avoiding dairy.
WARNING! This recipe was NOT tested without collagen powder (verified with TBL staff). It does NOT work without collagen powder–far too wet.

I recently made these muffins without collagen powder, and the recipe worked well. I know that coconut flour can be tricky to bake with, so I made sure that it was well-sifted before adding it to the wet ingredients. I hope this helps! 🙂
TBL staff told me that the nutritionist did not test it without collagen powder. I was surprised they would put it out there without testing an optional ingredient.
It didn’t work for another sister at our social, either. Not a great track record.

Hi Sarah! There are many different brands that sell collagen protein powder. I personally like the brands Bulletproof and Vital Proteins. When you find one you like, please let us know!
