- 2 eggs
- 1 tbsp water
- 1/4 cup red bell pepper - chopped
- 1 tbsp goat or feta cheese
- salt + pepper

Instructions
- Whisk eggs and water together in a bowl. Heat a skillet over medium heat (use cooking oil if necessary). Add eggs and chopped peppers to the skillet and push around until cooked through, but not hard. At the last minute, add goat or feta cheese, salt, and pepper. Enjoy!
