Ingredients
- 1 15 oz can of chickpeas , drained and rinsed
- ½ cup fresh chopped dill
- ½ English cucumber , diced
- 2 stalks celery , chopped
- 1 carrot , shredded
- 2 green onions , chopped
- 2 cups arugula
- 1 tbsp hemp hearts
Dressing
- 2 tbsp apple cider vinegar
- 2 tsp honey
- 1 tsp dijon mustard
- 3 tbsp olive oil
- salt and pepper , to taste

Instructions
- In a large bowl, combine the chickpeas, dill, cucumber, celery, carrot and onions, mixing to combine.
- In a small bowl, whisk together the apple cider vinegar, honey, and mustard. Slowly whisk in the oil until well combined. Dress the chickpeas, as desired.
- Divide the arugula between two bowls. Top with the dressed chickpea mixture and garnish with hemp hearts.
