Ingredients
- 1 cup cooked brown rice (or quinoa or cauliflower rice)
- 1 avocado - sliced
- 1/2 English cucumber - thinly sliced
- 2 large carrots - sliced or peeled
- 1/2 cup edamame
- 2-3 sheets of nori* - torn into small pieces
- 2 oz pickled ginger
- 1 tsp rice vinegar
- 3 tbsp liquid aminos (or soy sauce)
- wasabi (optional)

Instructions
- Combine rice and rice vinegar in a medium bowl and coat well. (Rice should be at room temperature.) Separate the rice into two bowls and divide the avocado, cucumber, carrots, edamame, nori, and pickled ginger evenly between them.
- Sprinkle on liquid aminos and wasabi as desired.
Recipe Notes
Nori is a Japanese name for dried seaweed and can be found in most grocery stores in the Asian cooking section.
