Ingredients
- 2 tbsp olive oil
- 1/2 yellow onion - chopped
- 1 medium tart apple - chopped
- 1 tbsp curry powder
- 1 clove garlic - peeled
- 1 large cauliflower head - chopped
- 4 cups vegetable broth
- 1 tsp raw honey
- 1 tsp apple cider vinegar
- salt + pepper
- plain Greek yogurt for topping (optional)

Instructions
- Heat oil in a large pot over medium-high heat. Add onion and sauté until soft. Add garlic, apple, and curry powder. Stir until curry turns deep yellow. Add broth and cauliflower and simmer over low heat for 20 minutes. Allow soup to cool for 20 minutes.
- Pour soup into a high-powered blender and secure lid. Blend until smooth. Add raw honey and apple cider vinegar to blender, replace lid, blend for 5-10 seconds. Return soup to pot and heat until ready to be served. Top with a dollop of Greek yogurt if desired!
