Ingredients
- 1 cup raw cashews
- 1/3 cup pitted Medjool dates
- 1/4 tsp vanilla extract
- pinch of sea salt
- 3 tbsp dairy-free chocolate chips (I like Enjoy Life brand)

Instructions
- Place cashews, dates, vanilla, and sea salt in a food processor and process until ingredients are well mixed and "dough" begins to clump. Add chocolate chips and pulse until well blended.
- Wet fingers and roll dough into 10 walnut-sized energy "balls". Store in an air tight container in the refrigerator for up to a week.
Oh my goodness, these are delicious! They truly taste like chocolate chip cookies. I founded I needed to add another date in order to make it all blend well. Enjoy!!

I used dark chocolate chips. So easy to make – in fact the hardest part is not eating them all in one go!
I had to add a bit of water in order for them to stick together. My kids and I love them! They will become a regular treat in our house.

Has anyone tried this with cashew butter instead of raw cashews?

Do you have to soak the cashiers to soften them?

Oh my gosh!!!! These are absolutely delicious! I have a small Cuisinart processor that did an ok job job will try my Nutri Bullet next.
