- 4 cups freshly popped popcorn (air-popper, Whirley-Pop, or stovetop)
- 1 tbsp coconut oil
- 1 tbsp maple syrup
- 1/4 tsp sea salt
- 1 1/2 tsp vanilla
- 1/8 tsp baking soda

Instructions
- In a small saucepan, bring coconut oil, maple syrup, and salt to a boil for 2 minutes. Remove from heat and add vanilla and baking soda. Drizzle the syrup over the popcorn and toss to coat evenly. Pour the coated popcorn onto a baking sheet and let cool. Store at room temperature in an airtight container.
I used to do a simple version of this – coconut oil/ honey/salt as a sub for kettle corn, and ate it hot.
