- 1 bunch kale - stems removed and leaves chopped
- 1 large orange - peeled and chopped
- 2 tangerines - peeled and chopped
- 1 large avocado - pitted, peeled, and chopped
- 0.25 cup shelled pistachios
- 0.25 cup pepitas (i.e., pumpkin seeds) or sunflower seeds
- 1 jalapeño - seeds removed and thinly sliced (optional)
- 0.25 cup crumbled feta or goat cheese (optional)
Dressing Ingredients
- 3 tbsp olive oil
- 2 tbsp fresh orange juice
- 2 tbsp fresh lemon juice
- 2 tsp raw honey
- 1.5 tbsp plain Greek yogurt
- sea salt + pepper to taste

Instructions
- In a small bowl, or jar, whisk together the dressing ingredients and set aside.
- Add kale to a large serving bowl and toss with 2 tbsp of dressing. Using your fingers, gently massage the kale for about 2 minutes. Once thoroughly coated, add in orange, tangerines, avocado, pistachios, pepitas, and jalapeño, and toss to coat. Top with additional dressing as desired. Crumble in cheese and serve!
