Ingredients
- 3/4 cup cashew butter
- 1/4 cup coconut oil
- 1/4 cup raw honey
- 2 tsp pure vanilla extract
- 1 1/2 cups rolled oats
- 2 tbsp gluten-free all purpose flour (like Bob's Red Mill)
- 1 tbsp unsweetened raw cacao powder
- 1/2 tsp sea salt
- 1/4 cup chocolate chips (like Enjoy Life brand)

Instructions
- Add the cashew butter, coconut oil, honey, and vanilla to a stockpot over low heat and stir until combined.
- Remove from heat and transfer the mixture to a large mixing bowl. Add the oats, gluten-free flour, cacao powder, and sea salt and mix well.
- Place in the fridge for 20 minutes to make the dough easier to roll. While waiting for the cookies to chill, line a baking sheet with parchment paper.
- Once chilled, add the chocolate chips and stir to combine.
- Form into cookie rounds, and flatten on the parchment-lined baking sheet. Transfer to an air-tight container, and store in the fridge until ready to enjoy.
I made these this morning and they’re delicious ? I did get 14 decent sized cookies from them rather than the suggested 6 which makes them even better!

Do you think they would taste as good using a different nut butter?
Hi Julie! I personally love peanut butter and made this recipe with that. 🙂 I think a nut butter of your choice will still be delicious with this recipe, like peanut butter was for me!
Mine were a little dry, crumbly and did not look like that picture. (Still delicious though)… Any tips/ideas what i should do next time?
Hi Kristy! You may want to try keeping your liquid mixture on the stove for a bit longer. You could also try adding a bit more honey and coconut oil if the extra heat doesn’t work out. We hope this helps! Please let us know when you make these again and how they turn out. 🙂
I used both of your suggestions…kept liquid on stove longer and added a little more honey and coconut oil. Helped so much. Batch two easier to make and still so tasty.

I replaced the oats with quinoa flakes (due to a intolerance) and they still turned out amazing! I even tried baking one and it was so good. Thanks for another delicious recipe!
