These were delicious! I did the homemade mayo option, and added in a little cilantro and some chipotle peppers from a can because I had them in my fridge. Super easy and yummy!
So yummy, satisfying, and wholesome! I love easy, approachable meals like this one that include ingredients that are easy to find or ingredients that I already have on hand. I also jazzed up my own avocado oil based mayo, which I have a feeling is even better than store bought chipotle lime because of the fresh lime juice! And the gluten free tortillas I found are surprisingly amazing! They remind me of lefse, a traditional potato based Norwegian food.
So glad you enjoyed it, Summer!
These are delicious! I added cilantro too from Kathyrn’s idea. A perfect, light meal for a post pilates workout–to lift your feel good high even higher. Will definitely make again.
I love this recipe! I tried it for lunch yesterday and it was as delicious! I can’t wait to have it again this week!
So glad you enjoyed this recipe, Cathryn!
