Ingredients
- 2 large cucumber - peeled, seeded, and roughly chopped (about 3 cups)
- 2 ripe avocados
- 1 cup raw cashews
- juice of 1 lemon
- 2 cloves garlic
- 1 tbsp fresh herb of choice (mint, tarragon, or cilantro would go well)
- 1 tsp sea salt
- 1 cup water

Instructions
- Blend all ingredients in a blender until mixture is smooth and creamy. Serve immediately or place in an air tight container and chill for 30 minutes before enjoying.
Recipe Notes
If possible, soak the cashew in water with salt for a few hours for easier digestion.
I made this recipe using cilantro – I didn’t have the other spices on hand- and without the garlic as I don’t like that too much. I generously sprinkled with red pepper flakes just before serving. It was delicious!
