Instructions
  1. Heat 2 tbsp olive oil in a large skillet. Cook chicken breasts on high heat until cooked through, about 5 minutes each side. Let cool briefly and then slice crosswise.
  2. In a serving bowl, whisk vinegar, oil, Dijon, honey and curry powder, season with salt and pepper. Add spinach, shallots and apricots and toss.
