Instructions
  1. Preheat oven to 425 degrees F. On a large, rimmed baking sheet, combine sausage, brussels sprouts, sweet potato, apple, and onion. Drizzle avocado oil and toss to coat. Sprinkle with salt and pepper.
  2. Roast for 20-25 minutes until sweet potato is tender and brussels sprouts are crispy on the outside and cooked through. Remove from heat and serve warm.

    This is a great basic recipe. I used the veggies I had on hand and everybody loved it. This is a versatile dish!

  2. I absolutely love this recipe. I make sure to keep a yam and some Costco chicken apple sausages on hand and I’ve made it so many times with so many vegetables. So simple and perfect

  3. Delicious. Easy method to use again and again. Added a tablespoon each of maple syrup and Dijon mustard to the oil and tossed everything in it before roasting. Already planning what to add when making it again, everything bagel seasoning? Creole? Herbs de Provence? Would be good topped with some toasted pumpkins seeds or pistachios. Clearly a winner.

  4. Made this tonight. My husband and 16 yr old daughter LOVED it. Added some maple syrup as Heidi suggested and it was fabulous. Will definitely put this into my dinner rotation.

    Would definitely make this again! Easy, Delicious and healthy. Except I used sweet Italian sausage, because that was what was in my freezer. Substituted 20 oz. frozen broccoli florets for the Brussel sprouts and did not have a red onion. Leftovers tomorrow! Yum!

  6. This recipe has turned into a house favorite! I include red/green peppers, mushrooms, and broccoli. We’ve used turkey sausage and it turns out great!

  7. I have wanted to try this for a long time, and with the stay at home order I finally did, using the Dijon mustard and maple syrup variation. The brussels sprouts weren’t a hit (next time I’ll first marinate in balsamic vinaigrette) but my whole family went back for seconds – I honestly did not expect that! I cant wait to make again!

    I make a version with Italian chicken sausages, butternut squash, red onions & gnocci which is really yummy & is a family favourite. Will try this out though.

  9. Everyone on the Facebook group raves about this recipe, and I didn’t want to miss out- despite being a vegetarian. Vegetarian apple and sage Field Roast brand sausages work so well with this dish- complementing the flavors of the apple and sweet potato particularly well. Delicious!

      Hi Erica! Grapeseed or olive oil could work in its place. ? (Other fats seen in many other of our recipes – such as ghee or coconut oil – won’t work as well because it has a lower smoke point and is likely to burn in the oven.)
