Ingredients
- 2 cooked chicken breasts , cubed or shredded
- 1/2 cup red grapes , halved
- 1/2 stalk celery , chopped
- 1 tbsp red onion , chopped
- 2 tbsp chives , chopped
- 2 tbsp chopped walnuts
- lettuce leaves , for serving
Dressing
- 1/2 cup unsweetened, full-fat Greek Yogurt
- 1 tsp dijon mustard
- 2 tsp raw honey (optional)
- 1 clove garlic , chopped
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp freshly chopped dill
- Pinch of sea salt and pepper to taste

Instructions
- Make the dressing ahead of time by adding all the dressing ingredients to a bowl. Blend using an immersion blender. Alternatively, add all the dressing ingredients to a food processor, or high-speed blender, and blend until creamy. Store in the fridge until ready to use.
- To prepare the salad, add the cooked chicken to a mixing bowl followed by the dressing. Mix in all the remaining ingredients and serve over lettuce leaves.
