Instructions
  1. Heat olive oil in a large pot over medium-high heat. Sauté carrots, onions, garlic, cumin, coriander, and red pepper flakes until veggies begin to brown. Once veggies are lightly browned and softened, add broth and mix well. Cover pot with lid and simmer for about 30 minutes.
  2. Purée soup in a blender or with an immersion blender and serve with a dollop of plain Greek yogurt or slivered almonds.
