Ingredients
- 4 4 oz salmon steaks
- 1 large broccoli head - chopped
- 2 red bell peppers - thinly sliced
- 4 tbsp olive oil - divided
- salt + pepper
- 1 large lemon - sliced
- 1/2 large yellow onion - thinly sliced
- 8 oz Crimini mushrooms - thinly slice
- 4 oz goat cheese - divided

Instructions
- Preheat oven to 400 degrees F. Cut four large rectangular pieces of foil. On each piece, layer 1/4 of red bell peppers and 1/4 of broccoli. Drizzle with olive oil and then place salmon on top of the vegetables. Top the salmon with a drizzle of olive oil, a sprinkle of salt and pepper, and 2-3 lemon slices. Seal the aluminum foil packets and bake for 20-25 minutes.
- While the salmon is baking, heat 1-2 tbsp of olive oil in a large sauté pan over medium-low heat, and add onions and mushrooms. Stir occasionally while the salmon bakes. Once the salmon is cooked, open the salmon packets (be careful of the steam) and remove veggies and salmon from foil. Top the salmon and veggies with goat cheese and caramelized mushrooms and onions. Serve immediately.

This one will NOT disappoint! So yummy!
I could not follow this recipe exactly since I didn’t have everything so I was inspired to substituted the following that I did have and press on with the recipe! I used
Asparagus for the broccoli
Parmesan for Goat cheese
And I used both red and yellow bellpepper
It was delicious. Next time I will plan better and make the recipe as it is shown!
