Ingredients
- 1.5 cups whole grain or high fiber pasta , cooked according to package directions
- 1/2 cup small mozzarella cheese balls
- 2 cups grape or cherry tomatoes , halved
- 2 cups spinach
- 1 tbsp olive oil
- 1 tbsp white wine or champagne vinegar
- 1 clove garlic , chopped
- 1/4 cup almonds , chopped
- 1/2 cup fresh basil , chopped
- sea salt and pepper , to taste

Instructions
- Combine cooked pasta, cheese, tomatoes, and spinach in a bowl. Drizzle with olive oil, vinegar, and garlic, stirring to combine.
- Top with almonds and basil. Enjoy!
