Ingredients
- 2 cups frozen butternut squash , thawed
- 3 cloves garlic , whole
- 1/3 cup canned coconut milk
- 1/3 cup nutritional yeast
- 2 tsp dijon mustard
- 1 tsp smoked paprika
- 1/2 cup raw cashews
- 1 tbsp apple cider vinegar
- 3/4 cup water (or broth)
- 2 cups whole grain pasta any shape, or gluten free, if needed
- 3 cups small cauliflower florets
- Toppings: optional: 1 tbsp hemp hearts, smoked paprika

Instructions
- In a blender, combine butternut squash, garlic cloves, coconut milk, nutritional yeast, mustard, paprika, cashews, apple cider vinegar, and water. Blend until smooth.
- Transfer to a pot, and simmer for 15-20 minutes over low heat until thick, stirring occasionally.
- Meanwhile, bring a pot of salted water to boil. Add the pasta, cooking for 6 minutes.
- Add the cauliflower to the pot, and let cook for an additional 2-3 minutes, or until tender.
- Add pasta to the butternut mixture. Top with hemp hearts and smoked paprika before serving.
Just checking on steps four and five. I’m adding the cauliflower into the pot with the squash mixture and cooking for 2 to 3 minutes, not the pot with the pasta, correct? I’m assuming then after the pasta cooks I’m draining it and lastly throwing it into the pot with the butternut and cauliflower,
I put it in with the pasta for the last couple of minutes of cooking. Then I drained the pasta/cauliflower and added them to the sauce. ☺️
So you cooked the pasta for a total of 8 or 9? Did you soak the cashews? Totally forgot to ask that before
We liked this recipe, but we did need to add salt. I soaked the cashews for about an hour and they blended pretty well in my food processor. I usually see people soaking theirs longer when making a “cheese” sauce. Not sure if this is a necessary step.

Should the butternut squash be uncooked and cubed or puree?
Hi Ann Marie! The squash should be uncooked and cubed. It will then be blended with other ingredients to become smooth or more puree like. 🙂 We look forward to hearing how you like this after giving it a try!

To which pot do we add the cauliflower? Does it cook with the sauce, or the pasta?
