Instructions
  1. Start by adding the oats, coconut milk, dates, cinnamon, and nutmeg to a high-speed blender and blend until smooth.
  2. Split between two mason-style jars or bowls and refrigerate overnight.
  3. Prep the salted caramel sauce by adding the almond butter, maple syrup, salt, and almond milk to a blender. Blend until smooth and place in the fridge overnight.
  4. When ready to serve, top the overnight oats with granola and drizzle with the salted caramel sauce.
  5. Tip: If you want to thin out the caramel sauce the next morning, whisk in another splash of almond milk before using!

      Thanks for your message! You can choose to omit them or add extra sweetener (since dates are on the sweet side). You could also substitute another fruit like banana, but note that doing so will change the flavor profile of the overnight oats. Let me know if this helps!

    I made this last night. It was very good and quite filling. I think I could squeeze 3 servings out of one batch, rather than two. It was a tad on the sweet side, so I might leave out some of the sweetener next time. My husband and daughter both liked it as well.

      Hi there! You can use unsweetened coconut milk that comes either in a carton or a can depending on your preference, although sometimes the milk that comes in cartons is a bit smoother and easier to blend smoothly. ?
