Ingredients
- 2 chicken breasts cubed
- 1 tbsp blackened seasoning
- 1/2 red onion thinly sliced
- 2 cloves garlic chopped
- 1 cup kale chopped
- 1 cup quinoa cooked
- coconut or avocado oil for cooking
- green onions for serving
- dairy-free queso sauce (like Siete brand) or guacamole, for serving
- 2 tbsp cheese shredded, for serving (optional)

Instructions
- Start by adding the coconut or avocado oil to a large skillet over medium heat with the cubed chicken breast. Cook for about 10 minutes or until no longer pink and cooked through.
- Add the seasoning, onion, garlic, and kale. Cook for another 5 minutes.
- Serve on top of cooked quinoa with sauce or guacamole of choice, green onions, and shredded cheese, if using.

It’s similar to cajun seasoning, but not quite as spicy. Made this tonight, I didn’t know what blackened seasoning was so I looked it up, easy to make. I did add cauliflower and corn, we loved it!

Wonderful! Tasty, quick and easy! I used Cajun seasoning (1 tspn was enough), frozen spinach, yellow capsicum and picante since that was all I had but it was really good and on the table within half an hour.

Perhaps it was the brand of blackened seasoning I used, but this was way too salty for my taste. My husband and daughter liked it though. I will try it again with less seasoning.
