Ingredients
- 2 bell peppers , halved lengthwise, seeds removed
- 2 tsp extra virgin olive oil
- 4 large eggs
- ¼ cup shredded cheese , or non dairy alternative
- salt and pepper , to taste

Instructions
- Preheat the oven to 425F. Place the peppers, cut side up onto a baking tray or dish. Drizzle with olive oil and season with salt and pepper. Roast for 10 to 12 minutes, or until they begin to soften.
- Remove from the oven, and sprinkle the cheese in each pepper. Crack an egg into the pepper and return to the oven for 15 to 20 minutes, or cook to desired doneness.
- Season with salt and pepper, and serve with toast, potatoes, or on its own.
