Instructions
- Preheat the oven to 375 degrees F. Slice beets using a mandolin or very sharp knife as thinly as possible (about 1/16" in thickness).
- In a large bowl, toss together beet slices, olive oil, and sea salt. Let beets sweat out some of the water for about 10 minutes. Line a baking sheet with parchment paper, and place beet slices in a single layer. Bake for 20-25 minutes, until beet slices are slightly browned and crispy.
- Let cool and enjoy with your favorite store-bought or homemade hummus.
