Instructions
  1. Preheat oven to 350 degrees F. In a large bowl, combine flaxseed and water (2 tbsp flaxseed + 5 tbsp water) and let sit for 5 minutes. Once it has created an "eggy" texture, mash in the bananas until well combined. Add in almond butter, coconut oil, vanilla, maple syrup, baking powder, baking soda, cinnamon, and salt. Stir well. Add in oats and flour and mix until well combined. Fold in mix-ins and stir until just combined.
  2. Shape about 3 tbsp of cookie dough into a ball and place on a prepared baking sheet. Using a fork, flatten cookies slightly. Bake the cookies for 15-18 minutes, or until the edges are golden brown. Carefully remove cookies from the baking sheet using a spatula and place them on a cooling rack.

    I love these and have made them every week for almost a year! Sometimes I sub real eggs or chia eggs for the flax eggs.

  2. These are so good! They taste like banana bread. I used real eggs instead of the flax eggs and I added the walnuts. Two of these cookies filled me up all morning!

    I make these all the time. They are so yummy. I use a toaster bag and put them in the toaster, it’s just like they’ve come out of the oven again!

  4. These are DELICIOUS! My kids love them, too (especially with a few chocolate chips added)! The only thing I changed (because my kids don’t really like the texture of rolled oats) was to pulse the oats in my magic bullet for a minute or two. New family favorite!

  5. These are a hit with my teenagers who aren’t fans of waking up or eating breakfast. They are delicious and very filling. It makes me so happy to know my kids are eating better and even asked me to make them again!

  6. Hello – has anyone subbed peanut butter instead of the almond butter? Or is there another substitution recommendation for almond butter, please?
