Instructions
  1. Start by preheating the oven to 425 degrees F. Slice the avocados in half, remove the avocado pit, and scoop a little extra avocado out of each half to make more room for the egg yolks.
  2. Next, place the avocado halves in a baking pan (or use a muffin tin to place the avocado halves in - this helps prevent the egg yolk from spilling out of the avocado boat).
  3. Crack one egg into a mixing bowl at a time, separating the egg white and yolk. Scoop the yolk into the center of each of the avocado halves. It’s ok if some of the egg white gets into the avocado “boat,” but you don’t want too much, or it will spill over while cooking.
  4. Cook for 10 minutes. After 10 minutes, remove from the oven, and sprinkle with the cheddar cheese (if using) and chopped chives. Bake for another 5-7 minutes or until the egg yolks are set.
  5. Remove from oven, season with salt and pepper, and enjoy!
