- 1/4 cup carrots - shredded
- 1 red bell pepper - chopped
- 1-2 chicken breasts - cooked and chopped
- 1/8 cup slivered almonds
- 1/4 cup mandarin oranges - drained
- 2 hard-boiled eggs - chopped
- 1 avocado - chopped

- 3 cloves garlic - minced
- 2 tbsp fresh ginger root
- 3/4 cup olive oil
- 1/3 cup rice vinegar
- 1/2 cup soy sauce
- 2-3 tbsp raw honey
- 1/4 cup water

Instructions
- Combine all salad ingredients in a bowl and toss well. Combine dressing ingredients in a mason jar and shake well. You may need to microwave it for a few seconds to melt the honey (make sure your jar is microwave-safe). Toss salad with desired amount of dressing prior to serving.
