- 2 tbsp avocado oil
- 1 small onion - diced
- 1 large sweet potato - peeled and diced
- sea salt + pepper
- 1 medium apple - diced
- 2 cups kale - stems, removed and chopped

Instructions
- In a large skillet, heat avocado oil to medium-high heat. Add onion and sweet potato. Season with salt and pepper and cook for 5-7 minutes until the potatoes start to soften.
- Add apples and continue to cook for another three minutes, stirring frequently. Once apples and sweet potatoes are tender, add kale and cook until wilted. Season with salt and pepper to taste.
- Serve the hash by itself or top it with a fried egg!
