Instructions
  1. Start by adding the chicken, mashed avocado, red onion, and apple to a large serving bowl.
  2. To make the dressing, add the oil and vinegar to a mixing bowl and whisk. Add in the remaining ingredients and whisk well. (Chill the dressing until ready to enjoy.)
  3. Top the salad with the pecans and drizzle with dressing. Enjoy!

  1. Delicious! I love chicken salad, and this is a much healthier version than the mayo heavy chicken salad sandwiches I usually eat. I needed to tweak the dressing recipe to be equal parts vinegar and olive oil to suit my tastes, but otherwise, I would definitely make this one again!
