Ingredients
- 1/2 cup cooked shredded chicken (you can use rotisserie chicken for an easy option!)
- 1/2 avocado , mashed
- 2 tbsp chopped red onion
- 1 crisp red apple , chopped (honeycrisp are great!)
- 2 tbsp pecans
- Drizzle of oil and vinegar herb dressing (see below!)
Oil & Vinegar Herb Dressing
- 1 tbsp avocado oil (olive oil works well too)
- 1 tbsp white wine vinegar
- 1 tbsp freeze-dried chives
- 1 tbsp dried parsley
- 1 tbsp granulated onion
- 1 pinch sea salt + pepper

Instructions
- Start by adding the chicken, mashed avocado, red onion, and apple to a large serving bowl.
- To make the dressing, add the oil and vinegar to a mixing bowl and whisk. Add in the remaining ingredients and whisk well. (Chill the dressing until ready to enjoy.)
- Top the salad with the pecans and drizzle with dressing. Enjoy!

Delicious! I love chicken salad, and this is a much healthier version than the mayo heavy chicken salad sandwiches I usually eat. I needed to tweak the dressing recipe to be equal parts vinegar and olive oil to suit my tastes, but otherwise, I would definitely make this one again!
