- 3 eggs - separated
- 1/4 cup unsweetened vanilla almond milk
- 1 cup almond flour
- 1/4 tsp salt
- 1 tsp vanilla
- 1 tsp maple syrup (optional)
- 2 tbsp coconut oil - melted

Instructions
- Preheat the waffle iron. In a stand mixer or with a hand mixer, whisk the 3 egg whites until they form moist stiff peaks and set aside.In a large bowl, whisk together egg yolks and almond milk. Add in almond flour, salt, vanilla, maple syrup, and coconut oil and mix until smooth. Add the egg whites into the waffle mixture and fold to combine.
- Scoop batter onto the preheated waffle iron, close the lid, and cook until golden brown.
- Optional toppings: peanut butter, maple syrup, strawberries, blueberries, or bananas.
I had high hopes for these as I love waffles and am always looking for a healthier way to enjoy them. These were difficult to mix as there isn’t enough liquid and they are also too dense. If I try them again, I’ll definitely be making some changes.
