Ingredients
- 1 egg
- 1/4 cup creamy almond butter
- 1/3 cup pure maple syrup
- 2 tbsp avocado oil or melted coconut oil
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 2/3 cup almond flour
- 1/2 tsp baking powder
- 1 tbsp cinnamon
- 1/2 tsp sea salt

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Combine wet ingredients in one bowl and the dry ingredients in another bowl. Then, add dry ingredients to wet and stir to combine. Let sit for 5 minutes.
- Using a heaping tablespoon, scoop cookie batter and roll the dough into balls, placing them on the parchment-lined cookie sheet. Flatten each cookie ball a bit with your hands.
- Bake for 13-15 minutes or until bottoms start to brown. Cool on a wire rack before serving.
These cookies are amazing! I needed to use an egg replacer b/c I can’t have eggs and they came out great. Also snuck in some ground flaxseed to make sure the kiddos get fiber. These were a win with my kids. Also my husband, who has a difficult time with change and likes to stick with what he knows thought these were delicious! Keep the recipes coming ?.

Really good recipe! The lemon zest and sea salt really make it. I subbed 1/3 cup of the almond flour for 1/3 cup ground flax seed per the idea above. I will be making these again!

We’re happy to hear these turned out well, Julia! To store, make sure cookies have cooled completely. You can then put them in an airtight container and keep on your counter for a few days or extend to about a week by putting them in the fridge. 🙂
