- 14 oz extra firm tofu (or super firm tofu) , torn into ~1-inch pieces
- ⅓ cup nutritional yeast
- 2 tbsp cornstarch
- 1 tbsp extra virgin olive oil
- 2 tsp soy sauce or gluten-free tamari
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp sweet paprika
Vegetables
- 2 carrots , peeled and cut into ½-inch strips
- 1 parsnip , peeled and cut into ½-inch strips
- 1 medium sweet potato , cut into ½-inch wedges
- 2 tbsp extra virgin olive oil
- salt and pepper , to taste

Instructions
- Tear the tofu into 1-inch chunks. Place on a paper towel lined baking tray and use a paper towel to pat the tofu, removing excess moisture.
- Place the tofu in a large bowl, and toss with nutritional yeast, cornstarch, olive oil, soy sauce, garlic powder, onion powder, and paprika.
- Arrange the tofu in an even layer in the air fryer basket, do not stack! Air fry at 400F for 12 to 14 minutes, tossing halfway through, working in batches, if necessary. Transfer to a wire rack. Keep warm in the oven if needed.
- Once the tofu is cooked, toss the vegetables with the olive oil, salt and pepper. Add to the air fryer basket, and air fry at 400F for 15 to 20 minutes, shaking the basket halfway through, until tender.
