  1. Love this recipe!! It’s a big family favorite! And my grandson who has a lot of food allergies and sensitives can eat it (without the cheese) unaltered. That’s a big win around here! And he Loves it!

  2. This is so yummy and pretty quick for a great dinner. I added corn and used homemade chicken stock as well as homemade enchilada sauce. So yummy! I didn’t add the tortilla strips as I just put everything inside a flour tortilla. Will definitely make again, as it is also toddler approved!

    1. Hi Ashley – thanks for your message! If you’re not grain free, we absolutely welcome you to modify our recipes to suit your taste and/or dietary needs. Corn tortillas sound like a great substitute.

  3. This has become a favorite and a staple in our house! Love how easy it is and how easy it is to make dairy free if needed 🙂

  4. I made this for tonight’s dinner and my husband and I both really enjoyed it! We added 1/2 cup canned corn, which was tasty.

  5. I’ve never heard of “nutritional “ yeast? Just read up on it. Do you recommend a favorite brand?. I’d like to try without buying a random bunch . Thank you!

Hi Karen! Bragg, Bob’s Red Mill, and Frontier Co-Op are some popular brands of nutritional yeast. ?

  6. This was delicious! I used white beans instead of black and added corn. Used a peach salsa and TJ’s green dragon hot sauce. Boom! Will definitely make again!

  7. Wow, I’m glad I decided to try this tonight—so easy and delicious! Gotta love one-pot meals ?. I served this with guac ?

  8. We made this for the first time tonight, and our 4-year-old who doesn’t like anything said it was “pretty good.” ? It’s definitely going in our regular rotation!
