Start by adding the ghee to a large skillet over medium heat. Add the cubed apples.
Add the water, honey, vanilla, and cinnamon and cook, stirring occasionally for 7-10 minutes or until the apples are tender (these cook quickly, so be careful not to burn and add a tablespoon more water if needed!).
Add apples on top of a bowl of coconut milk yogurt and top with granola and raw cacao nibs.
