  1. In a medium bowl, crack eggs and whisk well. Set aside.
  2. Heat olive oil in a pan over medium heat. Add zucchini and sauté for one minute. Add tomatoes and eggs and season with sea salt and pepper. Cook for another few minutes until eggs are almost cooked through. Add spinach and sauté until spinach is wilted and eggs are cooked. Remove from pan and sprinkle with parmesan cheese.
