Ingredients
  • 1 egg, boiled and peeled
  • 2 whole-grain crackers(like Wasa or Ryvita), or 1 small piece whole grain pita bread
  • 1/2cup edamame beans, in the shell, cooked according to packaging directions (or ΒΌ cup shelled)
  • 2tbsp almonds
  • 2tbsp hummus
  • vegetablescarrot sticks, celery sticks, cucumber slices, and/or bell peppers
  • fruitgrapes, berries, peeled mandarin, or 1 sliced apple
