  1. Grease slow cooker with olive oil or coconut oil. Place milk, water, and oats in slow cooker. Scrape vanilla bean pods with a knife and scoop out the beans. Stir into oats along with maple syrup, cinnamon, and salt. Cook on low for 8 hours or overnight. Enjoy with toppings of your choice! I like sliced banana and toasted almonds.
