Ingredients

hard-boiled eggs
– peeled
2-3
tbsp
high-quality mayonnaise or Vegenaise
1
tbsp
yellow mustard
salt + pepper
mixed greens or lettuce cups
for serving
Instructions
Finely chop hard-boiled eggs. Mix in 1 tbsp of mayonnaise at a time as to add just enough for a lightly creamy mixture. Add 1 tbsp mustard and salt and pepper to taste. Mix well. Serve over mixed greens or in lettuce cups.
