Preheat the oven to 400 degrees F. On a rimmed baking sheet, spread pepitas and coconut chips on a single layer and toast in the oven for 5 minutes. Sprinkle with sea salt if desired.
Remove from oven and let cool. Combine pepitas, coconut chips, sunflower seeds, dried cherries, banana chips, and chocolate. Toss and enjoy! Store in an air-tight container at room temperature for up to a week.
