  1. Preheat oven to 400 degrees F. Spread chopped sweet potato on a baking pan and coat with olive oil. Cook for 20 minutes. After 20 minutes, remove sweet potatoes, stir, and add remaining chopped veggies and sliced sausage. Toss veggies with garlic and a bit more olive oil if necessary. Return mixture to oven and cook for an additional 20-25 minutes, stirring regularly.
