  1. In a large skillet, heat olive oil over medium high heat. Add onion and bell pepper and sauté until they start to soften, 3-5 minutes. Add kale, cabbage, Brussels sprouts, garlic, paprika, oregano, sea salt, and pepper. Cook until tender, about another 5 minutes. Add sausage and sauté until warmed through. Remove from heat and serve.
  2. *I used one bag of the Cruciferous Crunch mix from Trader Joe’s. If you don’t have Trader Joe’s, check your produce section for shredded kale, cabbage, and Brussels sprouts to save time!
