Start by adding the lentils to a stockpot and cover with water. Bring to a boil and then reduce to a simmer. Simmer for about 20-30 minutes or until tender, adding more water if needed to make sure the lentils are covered during cook time.
Strain the lentils and return to the stockpot with ghee. Add the seasonings and stir.
Split into two servings and serve over a bowl of cooked brown rice.
Season with salt and pepper and garnish with fresh cilantro.
