  1. Preheat oven to 375 degrees F. In a small bowl, combine quinoa, almond butter, eggs, applesauce, honey, and vanilla. Mix well. Add the remaining ingredients (NOT including coconut oil) and stir until mixed.
  2. Grease a 9×13 pan with coconut oil. Spoon mixture into the pan and bake for 20-25 minutes. When bars are golden, remove from oven to cool. Slice into bars and store in the refrigerator.
